The aim of the project is to develop a novel biocatalytic process for the production of (-)-menthol. Along with vanillin (-)-menthol is one of the principal substances in the flavour and fragrance industry. The novel multi-step synthesis will start from a renewable resource which is a residue of an industrial process.
The investigations focus on biochemical and biomolecular characterisation and optimization of the enzymatic key reaction. Furthermore bioprocess engineering is applied to develop an efficient bioprocess.
The product would be the first (-)-menthol produced biocatalytically from renewable resources.
